Our lobsters are wild-caught from the cold pristine waters around Nova Scotia and is available live, or frozen whole. Prized for its hard-shelled and full meat qualities, Canada is the world’s largest producer of the American lobster (Homarus americanus). Annual landings have exceeded 40,000 tonnes, about half of the world’s supply of large-claw lobster. With improved technology such as dry-land lobster holding systems, quality controlled processing, improved grading, packaging, and transport as well as strict health and safety regulations, Canada is leading the world in providing the highest quality of live and frozen lobster.
