Pacific Scallop

These premium cultured Pacific Scallops (Patinopecten yessoensis) are one of the largest scallops in the world. A native species of Japan, they have thrived in recent years on Canada’s Pacific coast. They are known for their large-sized meat that is ivory in colour, tender in texture, with a sweet, succulent flavour. Highly popular for sashimi but a versatile option for any chef. There are approximately 3-4 pieces per 1 lb and 95–110 mm shell length.
