The Red Sea Urchin (Mesocentrotus franciscanus) is the largest sea urchin in the world and are abundant in Pacific coastal waters. Their roe, often known as “uni” ranges from bright yellow to deep orange in colour. Their meat is a delicacy and is renowned for their creamy texture that melts in your mouth. Uni is versatile and can be prepared raw or cooked as part of a sauce or bisque.
